Been grinding valves and seats since the sixties. For a novice, dress stones to 30-45-60 degrees. Determine where you want the seat to contact the valve and what width you want.
Be careful dressing the stones as it is real easy to knock the diamond out of the nib if you get rough. I don't know how anyone could expect to get and accurately ground valve seat if they don't dress the stone before they start to clean it up and don't dress it somewhere in the middle of doing the seats. That just flat doesn't fly.

Dec 22, 2019. #1. I picked an old Thor valve grinder off CL for $35.00. It's complete (except for collets) and works. It was very dirty and greasy but no rust. I've taken it apart and starting cleaning and de-greasing. My idea is to rebuild it and either sell it or re-purpose it as drill sharpener or other machine.

You will have to acquire an assortment of seat stones of different angles and sizes, and custom grind them for specific jobs. Way more to it than I can describe here.
